Prepare the Dough
In a large bowl, mix flour, yeast, sugar, and salt.
Add olive oil and warm water. Stir until combined.
Knead the dough on a floured surface for about 5 minutes until smooth.
Place in an oiled bowl, cover, and let rise for 30 minutes.
Preheat and Prep
Preheat oven to 425°F.
Line a baking sheet with parchment paper.
In a small bowl, mix melted butter with minced garlic. Set aside.
Shape and Top
Punch down the dough and roll it into a rectangle (about ¼ inch thick).
Cut into 1-inch wide, 4-5 inch long strips.
Brush with garlic butter mixture.
Sprinkle with mozzarella, parmesan, and Italian seasoning.
Press cheese gently into the dough.
Add pepperoni if using.
Bake to Perfection
Transfer to the prepared baking sheet, leaving space between each.
Bake for 12-15 minutes until golden brown and bubbly.
Let cool for 2 minutes before serving.
