Ingredients

  • 4 –6 chicken pieces thighs recommended
  • 1 cup uncooked long grain rice not instant
  • 1 packet Lipton onion soup mix
  • 2 cups chicken broth
  • 1/4 cup 1/2 stick melted butter
  • 1 small onion diced
  • 1 cup sliced mushrooms optional
  • 1/2 cup frozen peas and carrots or mixed veggies
  • Salt and pepper to taste
  • Dried thyme or parsley optional

Instructions

  • Preheat oven to 350°F (175°C).
  • Add rice to a 9x13 baking dish. Pour in chicken broth.
  • Sprinkle the onion soup mix over rice, then add diced onion, mushrooms, and veggies.
  • Pour melted butter over everything and mix well.
  • Season chicken with salt and pepper. Place on top of rice mixture.
  • Cover tightly with foil and bake for 2 hours.
  • Optional: Uncover and bake an additional 15 minutes to crisp up the chicken skin.
  • Let rest 5–10 minutes before serving. Enjoy!

Notes

Use thighs for juicier chicken that holds up to long cooking times.
Optional variations: add cream of mushroom soup, shredded cheddar, or hot sauce.
